Recipes will call for specific types of rice mainly because of the texture once the rice has been cooked.  Some recipes work best with firm rice, like a long-grain rice, while other recipes are for a chewy, plump medium grain rice.  

Arborio rice is a medium grain rice that develops a creamy texture once it is cooked.  This rice will be used for Risotto or rice pudding.

Jasmine is a long grain rice that has a soft texture which is ideal for soaking up spices and flavors.  This rice is commonly used in stir-fry dishes or with curries.
