Answer:

Due to not being exposed to sunlight during forcing, rhubarb plants don't develop large leaves. They instead use the energy that was supposed to be used to grow leaves to grow vertical, in hopes of trying to find some sunlight. If they are unable to find sunlight they weaken due to not being able to photosynthesize.
