Vegetables are edible part of the plant. It is largely consumed by different animals. These are highly rich portions of plants with starch. The difference between the fruit and vegetable is that fruit is ovary portion and other edible parts of plant are categorized as vegetables(roots, edible photosynthetic parts).

Eating vegetables provides many health benefits to our body. It reduces the chances of chronic diseases. Chronic diseases are those disesases which are long lasting such as cancer, heart diseases, diabetes etc.
- <u>No Fats and Cholestrol</u> The vegetables do not have animal fat and cholestrol which makes them great for consumption who have heart diseases or which are recommended to have low fats diet by the doctor. Cholestrol adds into the lump of LDL(low density lipoproteins) inside the blood vessels which cause the blockade of the vessel causing heart diseases.
- <u>Vitamins</u> Since the plants absorb nutrients and ions from the soil so they are really rich in Vitamins. Vitamin A, C and K are common in plants.
- <u>Rich in Potassium and Magnesium</u> They have potassium, magnesium, folic acid in large quantity and Dietary fibers.

The Vegetable Sources of potassium include sweet potatoes, white potatoes, white beans, tomato, beet greens, soybeans, lima beans, spinach, lentils, and kidney beans.
- <u>Dietary fiber</u> helps reduce blood cholesterol levels and may lower risk of heart disease. Fiber is important for proper bowel function. It helps reduce constipation and diverticulosis. Fiber-containing foods such as vegetables help provide a feeling of fullness with fewer calories.
- <u>Folate (folic acid)</u> helps the body form red blood cells. In Pregnant women, this reduces the risk of neural tube defects, spina bifida, and anencephaly during fetal development.
- <u>Vitamin A</u> keeps eyes and skin healthy and helps to protect against infections.
- <u>Vitamin C</u> helps heal cuts and wounds and keeps teeth and gums healthy. Vitamin C aids in iron absorption.

- <u>Vision</u> Green leafy vegetables containing carotenoids, increase the eye’s visual performance
- <u>Depression</u> Numerous studies have found links between the consumption of fruit and vegetables and depression.
- <u>Metabolic Disorder</u> Metabolic syndrome is characterized by impaired blood glucose, elevated blood pressure, dyslipidemia, and abdominal obesity. A diet rich in fruits and vegetables is associated with a reduced risk of diabetes mellitus, hyperlipidemia, and hypertension.
- <u>Scurvy</u> It is caused by the deficiency of Vitamin C.
- <u>Nyctalopia</u> It is also known as Night Blindness, It is caused by the deficiency of Vitamin A.
