That is the problem with the sentence we are to correct here. Two activities have -ing, "swimming" and "hiking." But, "the amusement park" is not a verb and does not use -ing. Therefore, it should not be a part of the parallel structure.

To correct the sentence, we must create another clause to eliminate the attempt to make "amusement park" a parallel structure. Therefore, the correct answer would be: "On our vacation we went swimming and hiking, but we didn't go to the amusement park."
