This is the sentence that encourages the reader to take a position on the text. The passage describes how people used to burn whole houses in order to cook pigs, until they discovered that pigs did not need that much fire in order to be cooked. By the end of the passage, the author argues that pig is a food worthy enough of causing a house to be burnt down. The way in which we know that the author is trying to persuade us is by the use of the phrase <em>"it must be agreed.</em>"
