  • Osmosis is the process by which water molecules move from a region of high concentration to a region of low concentration via a semipermeable membrane.

This has to do with osmosis ( movement of water). The water is a hypotonic solution compared to the lettuce which cells are hypertonic. This causes the water to move in the lettuces cells causing the lettuce to have more structure because there is more turgid pressure.
