Fermentation is the process in which chemical change takes place in the complex organic molecule by the help of the microorganisms.

Brewers take special care to prevent the air from entering the fermentation tanks. As commercial brewing is a global business special care is taken by producing the beer in strict anaerobic and controlled conditions.

Only the desired yeast is introduced into the fermentation tank along with the sterile air, keeping all the undesirable substances out of the tank.
