The reason why farmers put manure at the roots of the plants is because that is how most of the nutrition is taking up into the plant.  Most of the minerals in the earth are absorbed into the plant for usage by the roots which is why the manure would be placed where the roots are.  However, it's important to not put too much because that can actually cause the roots to get burned because there is too much minerals so it's important to keep a balance.
