In contrast to cellulose, where each succeeding glucose unit is rotated 180 degrees, starch repeat units are situated in the same direction. Compared to sugar, which is not water soluble, cellulose is thicker. On the other hand, starch may be dissolved in warm water and is less brittle than cellulose. Since mammals absorb starch, cellulose is not suitable for human diet.
