Caesar’s mushrooms have smooth deep or redish orange skin thats stiff and somewhat stretchy also holds shape when cut and underbelly of the cap line with yellow gills and stems often encapsulated with remnants of universal veil called volva, which is a white cup shaped that protects the developing gills and also when young, the volva hugs the small cap and mushroom resembles an egg, this earning it nickname “ovoli”. The flavor and fragrance are similar to hazelnuts. also may have to do with growing environment. also European mushrooms will continue developing after harvested and should be eaten soon after purchase.
