Fortified foods are rich in vitamins A, B and D along with folic acids iodine and iron. These are also responsible for the balance in the red blood cells of the blood. A person who does not consume any animal-based product, fortified foods, or supplements may suffer from a disorder known as macrocytic anemia.

Macrocytic anemia is caused by a lack of red blood cells in the blood. Vitamin B12 and iron deficiency is the major cause of this anemia. The size of the blood cells of a person suffering from macrocytic anemia is usually larger than the usual size. There is less supply of oxygen, which leads to other health problems.
