The question says there are 18 pair of eyes staring at the monkey.

Usually 1 pair of eyes are consideed for 1 person.

It means , 18 pairs of eyes means 18 animals.

Means 18 animals are staring at monkey when it grabs the apple from unicorn's mouth.

This 18 animals includes unicorn itself because when monkey was grabing the apple from unicon's mouth, unicorn must be looking at him.

So, number of animals present at that time in forest : 18 animals(including unicorn) + 1 monkey itself

Means total 19 animals
