Osmosis is the process by which water molecules move from the region of lower salt concentration to the region of higher salt concentration, through a semi permeable membrane. 
When the thin slice of potato was put inside the salt water, it shrivels because water move out of its cells into the salt solution. When the potato slice was placed in ordinary water, it regained its normal shape because water molecules enter into its cells.
