Because the pigments in objects absorb or reflect light, and the reflected light which we recognize as a specific color. Each person or animal could recognize that color as something completely different than another. Also, because color is only a reflection of light, what we recognize may not be an inherent property at all.

This allows them to thrive, take advantage of the limited resources over other members of the population, and be more likely to survive to reproductive age. This is natural selection.

Because this variation is genetic (in the DNA), they can then pass it on to their offspring. Over time, this leads to evolution over time.
