To do this, you will need to make a ratio of bagels:hour, or 240 bagels:5 hours. This can ratio can be rewritten as 240 bagels/5 hours.
So,
\frac{240 bagels}{5 hours} = \frac{48bagels}{1 hour}
All you needed to do was simplify the fraction.
Now, you have the ratio needed(answer to part 2), and now you can solve how many bagels can be made in 19 hours. Since we don't know how many bagels, we will replace bagels with x. Since both ratios, \frac{48 bagels} {1 hour} and \frac{x bagels}{19 hours} are equivalent to each other, we can just make them equal to each other

\frac{48 }{1} = \frac{x}{19}
x*1=19*48            Cross-multiply the equation.
x=912 bagels       Solve.

So, in 19 hours, 912 bagels can be made(Part 1).
