The preservation technique that attempt to remove moisture is called dehydration.

Food preservation is the method used to prevent any food from spoiling. Methods such as canning and drying are various ways by which food can be preserved.

There are different ways food can be preserved, but one of the oldest methods and of food preservation is dehydration. Dehydration method is the process by which food is preserved for a very long period of time by extracting moisture, which prevents the growth of microorganisms.  Dehydration was used by ancient people in seeds sun-drying. In those days, the Native American preserved their meat by sun-drying the slices.  

When foods are dehydrated, it inhibit microorganism from growing on the food.  

We can dehydrate food by using different methods. We can use the sun, a conventional oven, electric dehydrator and a microwave oven. Just like every other type of preservation, dehydration also requires some energy.  Apart from using sun-drying, the energy cost to dehydrate foods at home is very higher than for canning, although in some cases, it is more expensive than freezing.

Food dehydration is cost effective. It helps us to save money. It is simple because it takes less energy and time.

Dehydrating is the oldest method of food preservation. It is a method of removing the moisture of the food by adding heat to achieve a low level of moisture reducing the chances of bacterial growth. Moisture or water is one of the necessities for a bacteria to live and grow.

Food Preservation is a method used to keep food safe and of high quality for as long as possible by controlling the growth of pathogenic bacteria that causes spoilage. The procedure used to preserve food is science-based and via a variation of technologies aiming to increase the product shelf life while maintaining the overall product quality.

The following are the basic ways to preserve food:

  1. By using high temperature – examples of these are canning, pasteurization and sterilization. Bacteria are killed by high heat.
  2. By using low temperature – such as freezing and chilling. Low temperature inactivates bacterial growth.
  3. Removing moisture – such as  drying and accelerated freeze drying. Low moisture food are not susceptible to grow because bacteria need water to live.
  4. Use of additives -  some additives act as preservatives like sodium benzoate which is known to reduce internal pH.
  5. Controlling the atmosphere – examples are vacuum packing and modified atmosphere packaging. These are kinds of packaging that suppresses air, thus reducing the bacterial growth.
