This is an important property in the body of organisms because, for example, water helps in the folding of proteins (by interacting with polar motifs of a protein) hence ensuring the protein maintains their functional structural forms.

Water also dissolves significant polar molecules that are utilized by the body, such as glucose, and helps in their transportation within the body. Water is also significant in the diffusion of hormones used in cell signaling, e.t.c.
