It's very important because, raw food (under cooked) can make the person who hate raw food very sick. Sometimes raw food many contain salmonella. Which salmonella can make you very stick, in many cases people have had to stay in the Hospital depending on how severe it is. Eating anything that's raw can make you very sick. That's why it's best that Alex can recognize if food is done correctly, and not under cooked.
