The alcohol kept boiling because it has a lower boiling point compared to the water which has a boiling point of 100 degrees celcius. As the temperature cools off, the molecules of water begin to go back to its normal state, while the alcohol has molecules that are still excited from the slow decrease in environmental temperature.
