Availability of produce maybe? Countries in Asia have climates ideal for growing rice so it's a big part of their cuisine, as well as spices. Where as countries in the pacific eat high carb foods like Taro, Potato and Kumara cause they grow well in those climates. Not sure about elsewhere but I'd say climate effects the kind of vegetables/fruits that can grow :)
