Answer: The scribes in Egypt wrote down all the records and kept track of things that went on in everyday life.  They also wrote letters for people who would not write because only  scribes mostly knew how to write. In addition they also used a paper called papyrus which was made from a papyrus plant. That it what scribes in Egypt did.
