The vapors are generated in the interior of food materials due to volumetric heating and these vapors are forced to move outside.

Dehydration happens when cooking using microwaves because these waves hit the waer molecules which would cause them to excite or to move rapidly and in return dissipte heat due to this rapid motions. As heat is added, water would start to vaporize until the object is dehydrated.
