Unsaturated fats are fats which have one or more double bonds in their fatty acid chains. The number of these double bonds determine the degree of unsaturation of the fatty acid, the higher the number of double bond, the higher the degree of unsaturation of the fat. Unsaturated fats are liquids at room temperature.
