For example maltase enzyme is necessary to convert maltose sugar into simple sugar in aerobic condition under specific pH and temperature range. Thus, the factors which could affect the respiration pathway adopted by yeast depends on  

a) Environment condition including presence of air, temperature and pH

b) Type of food  available and enzymes

Hence, both option A and B can explain the experiment results.
