Answer: When a liquid changes to a gas

Gases hold so much energy that the molecules are moving so quickly they literally jump out of a liquid and begin flying around the room. It is at this temperature that a substance is holding as much heat energy as it can hold, so it's temperature stops increasing, even if more heat is added.
