Bile is a greenish yellow liquid produced by the liver. This substance acts in the emulsification of fatty foods. In this case we can say that bile is the emulsifier found in the liver and used in the digestive tract.

Enzymes that would break down the fat particles have difficulty interacting. Hence they need another element to aid in emulsification. This substance is bile. Like detergent, bile acts to break down large particles and shrink them to absorb them.

About one liter of fluid is produced daily and 50 ml is stored in the gallbladder. The bile performs many functions, among the main ones are:

• Fat digestion;

• nutrient storage;

• Facilitates the action of pancreatic enzymes;

• Balances liver bacteria;

• detoxifies the liver;

• Absorbs vitamins;

• Discards substances from the blood.
