Firstly chef will lose 55% from 80 pounds, then he will lose 60% of what he had left, so we need to do two calculations:

55% from 80 pounds =
= 55% * 80 =
= 55/100 * 80 =
= 11/20 * 80 =
= 880/20 =
= 44

So after the trimming chef will have 44 pounds of strip loin. After cooking he will lose 60% of the trimmed weight, so:

60% from 44 pounds =
= 60% * 44 =
= 60/100 * 44 =
