The chemical formular of amylose is( C6H10O5)n, Where  the value of n= ranges from 300- 3000.These element are held together by alpha 1-4 glycosidic bonds in starch molecule( which contains amylose and amylopectin.) Both molecules are the chemical build up of starch.

Since water molecules are formed from the combination of OH and H atoms from each of the  glucose molecule, with each of the   glucose molecules either given out  OH, H, OH, H  atoms, as there are 4 glucose molecules, and 3 water molecules can be formed from 4-glucose molecule, Hence 3 water molecules will be liberated during condensation.
