Here's why:

Mass is how much matter an object has. It is a scalar quantity. Kilogram is a unit of mass. Gravity has nothing to do with mass. That is why no matter where you are in the universe, you have the same mass even when you are not on Earth.

Weight on the other, is the gravitational force on an object. So it changes, depending on the force gravity applies on it. On Earth for example, the acceleration of objects due to gravity is 9.8m/s². When you multiply it to the mass, you will get the weight which would have the unit kg.m/s², which is also N or Newtons.

Weight is measured in Newtons, mass is measured in kilograms, mass does not change when gravity changes; weight does, mass is the amount of matter in an object, and weight is a gravitational force
