Enzymes work best and are more efficient at a certain temperature. This is called the 'optimum temperature'. This investigation was carried out at 40° as this temperature allows more collisions among the molecules, thus being the optimum temperature for enzyme activity.

Higher temperatures causes the enzymes to be denatured .
