By definition, searing is a technique in which the meat's surface comes into contact with a very hot surface (pan, grill, etc.) and forms a flavorful crust in result (known as Maillard reaction). Searing requires the surface of the meat to be dry. In the case of salmon, the skin helps it cook more evenly.
