I would say it is like building a house from the foundation up. You start with an outline to get the basic ideas of what you want to say down (floor, walls, etc.) then you fill in the details whether that be with facts for non-fiction or imagination for fiction. (furniture, curtains, carpet, etc.) When you edit you are doing you're final clean up before it is ready to move in (turn in).

If the writing process were anything like a an assembly process at a factory, there would be no thinking present, just a set of actions anyone could do. Unlike this, writing involves a lot of thinking in every process. In addition, in an assembly process there is no going back. In contrast, when writing, one must sometimes "disassemble" what has already been done in order to improve the final copy.
