The answer to this question is Personal taste.

As every one has his or her own love for food and a difference in their taste they would obviously take the most time in selecting a dish or the ingredients to prepare a dish that suits their taste buds.

Whether those ingredients are a little far away they will go and buy them so that the food they eat should please them.
