If the projectile lands at the same height it was launched from, then its time of flight will be proportional to the vertical speed. Its horizontal distance will be the product of its horizontal speed and its time of flight, so will be proportional to the square of the velocity.
If the velocity is doubled, the projectile can be expected to travel 2² = 4 times as far, not twice as far.
