Answer:

Lemon, garlic, and onion are acidic things, with strong flavors and also a really strong smell, in the other hand the oil is also a flavor enhancer that has not a lot of smell or "intrinsic flavor"

These things, besides the flavor, adds a lot of smell (More like an  aromatic essence) and "freshness" to the dish (Aswell as nutritive properties, that I am overlooking), and in a lesser quantity, it also affects the texture that the diners may perceive when they eat.
