Convection is a mechanism of heat transfer through the movement of a fluid where heat is transported between areas with different temperatures. This type of transport is produced in liquids and gases due to its ability to move freely and establish currents that we call convective.

Both liquids and gases are considered fluids, and molecular movement is responsible for transferring heat naturally. Convection heat transmission occurs when the hottest parts of a fluid ascend to the colder areas, thus generating a continuous circulation of the fluid (convective current) and thus transmitting heat to the cold zones.

The liquids and gases, when increasing of temperature decrease of density, causing the ascent. The hole left by the hot fluid is occupied by the coldest (highest density) fluid.

Condensation is the change of the physical state of a substance from the gaseous state to the liquid.  Condensation occurs when a saturated vapor that comes into contact with a surface at a lower temperature, cools until the temperature becomes lower than its saturation temperature. Condensation produces a heat transfer as follows: the latent heat (amount of energy required by a substance to change phase) contained in the vapor is released at the moment when the vapor condenses into the liquid phase. The amount of latent heat delivered is 2-5 times greater than the amount of sensible heat (amount of heat absorbed or released by a body) contained in hot water (saturated water) after condensation. This latent heat is released instantly and transferred by means of the heat exchanger to the product being heated.
