First, both the extracellular fluid and the cytoplasm are hydrophilic. The phosphate head of the phospholipid is hydrophilic hence it either faces the extracellular fluid and the cytoplasm. The lipid tail of the phospholipid is hydrophobic hence it is confined in the middle of the plasma membrane. Both cytoplasmic and the extracellular fluid ends of the transmembrane protein are hydrophilic and the middle part of the transmembrane protein is hydrophobic.
