Creaming is done for softening of the solid fat particles, smoothening of fat for blending other ingredients in it. In other words also called as sugar shortening method or sugar and fat shortening. During this process few air cells are formed which were then incorporated into mix. It is one of the important as well as initial step in which fat and sugar are blended together, unless it becomes light color with increase in the volume. It creates air, by this process light and fluffy cakes can be made.
