1. Water is capable of dissolving a variety of different substances, which is why it is such a good solvent. And, water is called the "universal solvent" because it dissolves more substances than any other liquid. ... 2. In chemistry, polarity is a separation of electric charge leading to a molecule or its chemical groups having an electric dipole moment, with a negatively charged end and a positively charged end. Polar molecules must contain polar bonds due to a difference in electronegativity between the bonded atoms.

3. The unequal sharing of electrons gives the water molecule a slight negative charge near its oxygen atom and a slight positive charge near its hydrogen atoms. When a neutralmolecule has a positive area at one end and a negative area at the other, it is a polar molecule.
