Amount of flour the cake requires =3\frac{1}{2} =\frac{7}{2} cups of flour.

Amount of flour that Helena should take out =\frac{31}{6} - \frac{7}{2}

                                                                          =\frac{31}{6} - \frac{7 \times 3}{2\times 3}

                                                                          =\frac{31}{6} - \frac{21}{6}

                                                                          =\frac{31-21}{6}

                                                                          =\frac{10}{6}

                                                                          =\frac{5}{3}

                                                                          =1\frac{2}{3} cups of flour.
