Cellulose is a linear polymer of glucose comprising of beta 1,4-glycosidic linkage of glucose molecules; this is where it differs from starch. Cellulose is a polysaccharide made of glucose monomers just like starch. The enzymatic hydrolysis of cellulose is achieved by the enzyme cellulase.

Not all animals can digest cellulose. As a mater of fact, no vertebrate can digest cellulose directly. Many herbivorous animals possess symbiotic bacteria in their gastrointestinal tract which enables the digestion of cellulose. These bacteria possess the requisite enzymes for the digestion of cellulose.
