A Griever is a creature that lives in the Maze and comes out mainly after dark (this is not always the case, they have sometimes been known to come out in the daytime). Its purpose is to harass and even kill the Gladers who venture into the Maze.
“Greetings, stranger! / Here in our house you’ll find a royal welcome. / Have supper first, then tell us what you need.”
The hospitality is shown because they are welcoming in a stranger and offering him a meal even before they find out what he actually needs.
