So variables such as time and dates will be on the X axis because they will never change.

Variables such as money, and anything else that will change will go on the y axis.

Something that helped me to remember this was that if you were going to build a house and use the letters X or Y as your base, what would you choose?

Hopefully it would be the X, because unlike the letter Y the X will not tilt to one side or the other. X will never change, unlike Y.
