On page 7, janie tells pheoby, "unless you see de fur, a mink skin ain't no different from a coon hide." based on context clues, what do you think this saying means?

I believe the answer is: Telling and giving understanding are two different things.

Mink is valuable, coon is not, even though both are fur.
Janie implies that telling would be taken by people simply as passing sentence and would most likely forget it in a short period of time.
Making people understand on the other hand would most likely change people's behavior to the better.
