In order to stop germs from growing, food must get through the temperature risk zone quickly. The food must be cooled from 135°F to 70°F in just two hours, then to 41°F or lower in the following four hours.

Food must be discarded or reheated and then cooled again if 70°F is not attained in two hours. No more than six hours may pass during the entire cooling process.

As long as the meal was properly prepared and cooled before reheating, it can be served right away at any temperature.
