The Apalachee spoke the Apalachee language, a Muskogean language which became extinct. It was documented by Spanish settlers in letters written during the Spanish Colonial period. Around 1100 indigenous peoples began to cultivate crops. Agriculture was important in the area that became the Apalachee domain.
