The organisms which live in cold environment must have more amount of unsaturated fatty acids as compared to saturated fatty acids because <u>unsaturated fatty acids tend to freeze at comparatively lower temperature which provides the organisms an advantage and better adaptability to live in such environments. </u>The unsaturated fatty acids will not freeze easily even in cold environment and their body/cell will keep working perfectly even in cold weather. In contrast to this, the saturated fatty acids will freeze easily and the whole system of that organism will collapse during winter season.

Same goes with yeast. more unsaturated fatty acids in the body as compared to saturated fatty acids will help the yeast to live in cold environment. The reason for better adaptability is same as above.
