This doesn't seem like much of a biology question but more of a chemistry one :P

But to answer your question, as the temperature of the water molecules rises, the chemical bonds holding them together begin to fall apart, causing the structure of the ice to fall apart.

When water is evaporated, the chemical bonds holding the water molecules together becomes non-existent, and the water becomes a vapour in which molecules float independent of each other <span />

After the enzymes amylase breaks down a starch molecule, it can
zzz [600]

Generally speaking, enzymes (which amylase happens to be) do not undergo any permanent structural change while carrying out their function. Some do exhibit transient conformational change during a reaction, but upon completion regain their original form.

So your initial assumption is correct: once amylase has finished catalyzing the breakdown of starch into less complex sugar molecules, it moves on and repeats the process over and over.
