If glucose dissolves in water, this increases the amount of water inside the plant cell which most likely makes the cell to swell up ( hypotonic solution). The other reason why glucose is converted to starch is because glucose gets readily used whereas starch cannot be readily used and can be kept for future uses(storage)</em>
