The heat of the flame comes to the sauce pan by radiation of infrared energy. The heat is conducted through the metal of the sauce pan. Now, with water in the sauce pan, convection works. Convection brings the cold water to the hot surface of the hot sauce pan. Once when there is only hot water in the sauce pan, the water will boil.
